Kwesi's Egg Stew
This is enough for 4 people
1 onion, chopped
2-3 tomatoes per person, chopped
1 1/2 - 2 eggs per person (I do about 5). Whip together in a small bowl.
1/2 yam, peel off outside and chop
4 oz. tomato paste (the littlest can)
1/2 - 1 tsp. crushed red peppper (you can use pepe peppers instead if you want. This amount of crushed pepper makes it very mild the way I like it. If you want more heat, add more pepper).
salt to taste
vegetable oil (enough to coat pan)
1. Saute onion for about 10-15 min. Add tomatoes and crushed red pepper. Cook for about 5 minutes. Then add tomato paste. Let it thicken. Add salt and then taste to see if you need more.
2. Drop whipped eggs by the spoonful a little at a time. Don't stir, the eggs need to cook before you stir them in. Once eggs are cooked (about 10 minutes?) then stir it all together.
3. Boil yam in water like you would potatoes until soft.
Eat together. You can also eat the stew with rice or fried plantain.

Your "yam" is just like the manioc that people eat all over latin america. In spanish they call it a "yuca" kind of like a potato only a LOT tougher. But still really good if fried like french fries. Glad to see you guys are having a great adventure! We are SO jealous!
They probably are the same thing! Can you find these huge tubers in the US?
